I love a recipe that sounds fancy, tastes great, but is easy to make! Just stumbled on the idea of "Chicken Provencal"... played around with some recipes, and came up with one that fits all those categories. This is a case of the sum equaling more than the parts. Maybe it's the addition of Nicoise (or Kalamata) olives... they go so perfectly with the tomatoes. You can use canned, but at the height of tomato season, one might just add a few of those garden tomatoes instead.Hubby and I were in hog heaven. Or would that be, "chicken heaven"? (Perhaps not.)
